The Recipe: Star-Spangled Layered Pops
Ingredients
-
The Red Layer: 2 cups fresh strawberries (hulled), 1 tbsp honey or maple syrup, and a splash of water.
-
The White Layer: 1.5 cups vanilla Greek yogurt (or plain yogurt sweetened with a bit of honey).
-
The Blue Layer: 2 cups fresh blueberries, 1 tbsp honey, and a splash of water.
Step-by-Step Instructions
-
Blend the Red Layer: Puree your strawberries and honey in a blender until smooth. Pour the mixture evenly into the bottom third of your Ecoberi Popsicle Molds. Pop them into the freezer for about 30–45 minutes until just firm enough that the next layer won't blend into it.
-
Add the White Layer: Spoon or pipe the vanilla Greek yogurt over the frozen red layer to fill the middle third. Gently tap the molds on the counter to remove any air bubbles. Insert your popsicle sticks now, then freeze for another 30–45 minutes.
-
Finish with the Blue Layer: Puree your blueberries and honey until smooth. Pour this final layer into the top third of the molds.
-
The Deep Freeze: Freeze the completed pops for at least 4 to 6 hours (or overnight) until completely solid.
Pro Tip: To easily release your popsicles from the molds, run the outside of the mold under warm water for 10–15 seconds. They will slide right out perfectly intact!
